Looking for an easy dinner that works every time?
I make this chicken pie, it’s simple and my guys love it. I’m making a collection of my easy meals that I’ve made and tried, so I have a place to come back to refer to them. This was an old recipe I used to make when I was living on my own and would have friends over for dinner, it had to be easy and fast because back then it was all about the wine and the catch up! RECIPE Serves 4-6
500g chicken mince
4 rashers of bacon (shortcut, diced)
1 tbsp margarine
1 1/2 tbsp plain flour
1 cup milk
2 shallots chopped
1 cup tasty cheese grated
2 sheets of Pampas puff pastry
1 egg beaten
METHOD
Preheat the oven to 200°C. Dry fry the mince and bacon until moisture evaporates and set aside.
Melt butter in a frypan and add flour, stirring well to make a roux. On low heat slowly add the milk, whisking until the sauce thickens. Simmer for 3 mins.
Combine the sauce and mince. Allow to cool, then add the shallots and cheese.
Lay one sheet of the pastry on a greased tray and place the mixture in the middle. Shape into a square. Then cut the second piece of pastry so it fits ontop. Crimp up the sides with a fork and brush the beaten egg over the whole pie.
I cut a little shape out of the leftover pastry and place on the top.
Cook for 20-30 mins or until the pastry is puffed and golden.
We had ours with veggies this time, but I think it works better with a nice, fresh salad.
