Here’s an absolutely fab idea for a super quick dinner and the best bit… it’s fast and tastes yum! My guys ate the lot and that’s saying something. The big one had seconds and thirds and the little guy ate the whole thing, zucchini, carrots and all. Love, love it! Premade meatballs and a fab sauce… a great find and delicious dinner. You’ve gotta try it, you’ll love it.
Recipe Serves 4
1 medium zucchini grated
1 carrot grated
1/2 onion grated
420g Jar Sacla cherry tomato and basil sauce (you have to use this… was awesome)
1/4 cup beef stock
400g pre made meatballs from the supermarket or your butcher
Handful of baby spinach
Pasta (I used fettucini nests)
Parmesan cheese
Bread stick to soak up that gorgeous sauce
Method:
Halve and re-roll the meatballs. Heat the oil in a frypan,medium to hot heat, add the grated zucchini, carrot and onion and sweat for a minute. Then add in the Sacla sauce with 1/4 cup beef stock. Simmer for a few minutes.
Drop the meatballs straight into the frypan, bring to a boil and then simmer for 8-10 mins, shaking the pan to cook.
Cook the pasta to packet directions. Drain.
Serve pasta onto plate, then add a handful of baby spinach, then spoon over meatballs and sauce. Top with grated parmesan and serve with sliced breadsticks.

Especially loved this one (my little guy ate veges without knowing, ha!) I have now got a stock of this sauce and meatballs on hand as one of my super quick go-to meals.
While I was in the aisle at the supermarket, I told a lady about this and she told me the Arrabbiata was awesome too! This sauce was so tasty, will be trying it with some italian sausage and grated veges next. So glad I found you Sacla! I love it when little things make my life easier!
